Investigadores cordobeses  ha desarrollado un método científico por el que es posible mejorar la calidad de los vinos Montilla-Moriles. El sistema permite identificar qué proteínas del velo de flor, la levadura que se utiliza en la producción de estos vinos, sobreviven en altas concentraciones de alcohol. El fino de Montilla-Moriles tiene 15 grados de alcohol por lo que este método permitiría utilizar levaduras naturales en vez de sintéticas. El grupo de Investigación responsable de este hallazgo se denomina Vitenol y está integrado en el Campus de Excelencia Internacional Agroalimentario de Andalucía (ceiA3) de la Universidad de Córdoba.
