El trabajo es fruto del conocimiento adquirido en más de dos décadas de investigación sobre las algas de estos biólogos del Campus de Excelencia Internacional del Mar, en Puerto Real (Cádiz). Con él, han obtenido el premio al mejor libro de gastronomía en el apartado de salud y nutrición en los Gourmand Awards 2017, el certamen con mayor prestigio internacional sobre literatura gastronómica. La obra hace un repaso por la biología y fisiología de las algas usadas en la cocina, su historia culinaria, anécdotas… Cuenta, además, con la participación del reconocido cocinero Ángel León, que recopila las recetas más interesantes de los grandes chefs españoles con las algas como protagonistas.
