La Universidad de Jaén imparte el único curso en todo el mundo de experto universitario en cata de aceite de oliva virgen extra (AOVE) del mundo patrocinado por el Consejo Oleícola Internacional (COI). Cada año 30 estudiantes procedentes de diferentes puntos del mundo se forman en este ciclo de cinco módulos que los habilita como catadores oficiales, una especialización muy demandada por el sector. La formación los capacita para detectar la calidad de los AOVE y para mejorar la producción a escala mundial.
